Ingredients

For the Stir-Fry Sauce

  • 3 tablespoons soy sauce (or tamari for a gluten-free option)
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch (or arrowroot powder)

For the Stir-Fry

  • 1 cup dry green or brown lentils, rinsed and drained
  • 2 cups water
  • 2 tablespoons vegetable oil (such as sesame or peanut oil)
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small broccoli crown, cut into florets
  • 1 medium carrot, julienned or thinly sliced
  • 1 cup snap peas or snow peas, trimmed
  • 1 cup mushrooms, sliced
  • 1 tablespoon grated fresh ginger
  • Sesame seeds and chopped green onions for garnish
  • Cooked rice or noodles for serving

Instructions

  1. In a small bowl, whisk together all the ingredients for the stir-fry sauce: soy sauce, rice vinegar, maple syrup, sesame oil, and cornstarch. Set aside.

2. In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce the heat to a simmer. Cook for 20-25 minutes, or until the lentils are tender but not mushy. Drain any excess water and set the cooked lentils aside.

3. In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the sliced onion and garlic and stir-fry for 1-2 minutes until fragrant and slightly softened.

4. Add the bell peppers, broccoli florets, carrot, snap peas, and mushrooms to the wok. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

5. Stir in the cooked lentils and grated ginger. Cook for an additional 2-3 minutes to heat the lentils and incorporate the flavors.

6. Pour the stir-fry sauce over the vegetables and lentils. Stir well to coat everything evenly and allow the sauce to thicken slightly, about 2 minutes.

7. Taste the stir-fry and adjust the seasoning if needed.

8. Serve the Vegan Lentil and Vegetable Stir-Fry over cooked rice or noodles. Garnish with sesame seeds and chopped green onions.
